I'm confused about the last step of the starter. In the am she take 25g of starter, adds 100g water, and flour for a total of 225g .Then in the evening does she discard, 200g and take the remaining 25g and add 100g of water and 100g flour. It feels like that such a large amount of discard

I’m very excited to try this recipe. But can anyone tell me how much starter Im supposed to use? I’ve watched this video twice now and I’m not sure how I missed it.

Fun to watch…but such a long and involved process…surely there is a shorter route to still delicious bread 🤔 For now, I’m lucky to have local bakeries that now make delicious sourdough bread.
