INGREDIENTS:
For Dosa Batter:
Raw Rice – 1 Cup
Boiled Rice – 1 Cup
Black Gram Dhal (Urad) – ½ Cup
Fenugreek Seeds – ½ Tsp
Salt – To Taste

For Mushroom Masala:
Finely Cut Onions – ½ Cup
Finely Cut Button Mushroom – 1 Cup
Ajinomoto – 2 Pinches
Soya Sauce – ½ tsp
Tomato Sauce – 1 tsp
Salt – To Taste
Pepper Powder – ¼ Tsp
Red Chilli Powder – ¼ Tsp
Ginger-Garlic Paste – ½ Tsp
Garam Masala Powder – ¼ Tsp
Oil

METHOD:
1. Soak all the ingredients in water for 3 hours and grind to smooth paste.
2. Add salt at the end and ferment the batter until next day.
3. Prepare Mushroom Masala.
4. Heat oil, fry onions, ginger garlic paste and add the mushroom.
5. Saute for few minutes, add Ajinomoto and fry well until moisture evaporates.
6. Add Sauces, pepper powder, salt, red chilli powder and garam masala powder and mix well and remove from fire.
7. Heat a dosa pan and spread a ladle full of fermented dosa batter to form a thin dosa.
8. Add oil around and allow to turn crisp.
9. Spread masala on top, fold and then serve.

I love your vids.  BUT Aji no moto is MSG and most people try really hard to avoid that because most sources will tell you it is not good for health,  and some people are severely allergic to it.  It's not neccessary in the recipe.  Just use a good quality sea salt instead of this potentially harmful substance.  Best wishes.
