  1. Most of these look good but not that lasagne. Breakfast sausage, cottage cheese and that dry, sliced mozzarella don't belong anywhere near lasagne. Italian sausage, ricotta and a good quality, freshly grated mozzarella are better choices. Cottage cheese has a much stronger, distinctive flavor than ricotta which doesn't really have much flavor. The only people I've ever seen or heard of using cottage cheese in lasagne are Southerners and Mid-Westerners.
